puttanesca sauce

    Nice. It looks like a caper-filled sauce, which I love. I'd like to take a giant spoonful of this right now, please. Capers are so grotesquely underrated as a ... brined item or however you'd categorize them.

    Do you know, I read a recipe for puttanesca the other day that called for -- wait for it -- ONE TABLESPOON OF CAPERS for the entire vat of sauce, which included two 28-ounce cans? I mean, that is ridiculous.

    Looks wonderfully delicious! Spaghetti alla Puttanesca is one of my signature dishes in my home-kitchen. I personalize my recipe a bit by adding Kalamata and cured Green Olives, diced onions, and a few turns of a quality Cabernet Sauvignon. I also use Anchovy Paste rather than fillets as a personal preference. Everything else is pretty standard: generous use of Garlic, Capers and crushed Red Pepper Flakes. I only use San Marzano tomatoes in my Italian dishes … because they deserve it! ~ Cheers
