Potatoes with loads of smoked paprika.

    I usually just make it up as I go along. A pat of butter, a glug of olive oil heated in a pan. I add a finely chopped onion or a couple minced shallots (as in, whatever is on hand) and cook them for a couple minutes on low before adding one big potato, unpeeled and scrubbed, diced and cook-cook-cook until it browns--this part on medium/high. Easily takes 20 minutes, but is worth the wait--the hardest part is patience, and starting them way before you make the eggs (which only take me a minute or two). I season them with some salt and pepper and a lot of smoked paprika. If I have it around, I'll stir in either chives or, in this case, scallions near the end.

    I have to say, potatoes are my favorite - and this is one of the best ways to eat them!
