The number one reason I have never made tortilla de patatas is that there is not a recipe that uses less than ONE CUP of olive oil, the thought of which makes me feel faint. This one called for 1 1/4 cups, and we were hungover enough that I was only mildly preoccupied with our fat intake. But I did do a before and after comparison of oil use, and it turns out, it uses all of four tablespoons of olive oil. Not nothing, mind you, but not the cellulite-inducing gasp-worthy amount the recipe suggests. I strained the oil and will use the delicious onion-flavored oil in other things I cook this week.
