Anyone ever cook with white eggplant? I am fascinated by it...

    White eggplant were favored by Sephardic Jews since eggplant is a staple of Levantine cuisine and anything black was avoided on the Sabbath. I was just reading about the once thriving Jewish community of Aleppo, Syria circa 1900, and how they made a stuffed white eggplant recipe, kind of like this one.
    It's also delicious sauteed and then drizzled with thick yogurt and pomegranate syrup.
