      I should probably have asked about something other than the olives because I hate those! I looked through your webpage and it looked like a really fascinating meal. It also inspired me to play around with my whipped cream maker and some espresso, but I haven't quite gotten around to that yet.

      From my understanding, if you want to do foams, then you want to play around with methyl cellulose and agar agar. I'm on the hunt for those now, myself.

      The food was really good, ranging from the essence of taste to really intellectual surprises. Everything was a fascinating interplay of flavor (and flavor evolution), texture, and expectations.
