pisco - san pedro harvesting and preparation
Near our Pisco digs, we found a huge candelabra San Pedro cactus that had fallen over after the earthquake. It was surrounded by trash and rubble, but the fallen plant was covered in baby cactuses growing out of it. Nick, Audrey and I cleaned up around the cactus, watered it, and then harvested some. This we prepared in the traditional way, peeling it, cutting away the light green part, and boiling the dark green part over a ceremonial beach campfire at Paracas National Park. We drank our brew the next day before dawn and had an unforgettable day at Paracas.
