Lemon Blossom

I made Paula Deen's Lemon Blossoms over the weekend, and let me tell you they are delicious! The cupcake is the consistency of a light pound cake, and the lemon glaze on top is both sweet and tart. The recipe itself was easy (link below), but making them was a bit tricky. The key is to not fill the muffin tins more than 1/2 full or less with batter. As you can see, mine fell in the middle and came out a little dry because I used a bit too much batter. I opted to only glaze the tops, instead up dunking the whole cupcake like the recipe calls for, which was more than enough. I ended up getting 3 dozen mini cupcakes and 12 regular size cupcakes from the recipe. Both sizes worked well, but I preferred the mini cupcakes because they almost taste like donut holes and you could eat more of them :)
