Charred Octopus

crispy pork belly, hominy, paprika, pickled jalapeno ($13)

 

A reinterpreted surf and turf with a milder and homier feel. Of course not all homey with paprika aioli or espuma. But really, who's counting? JK. Harmonious and a lovely starter where every element was slightly giving and all hovered around the middle line i.e. nothing too strong, nothing mild or bland (to say neutral is a complete disservice).
