Tasty Birch Sap

This adorable Red Squirrel was busy licking away at the bark of this Paper Birch growing in the Cranberry Glades Botanical Area, in the Cranberry Wilderness in Pocahontas County, WV. I read where these squirrels will "tap" Maples for their sugary sap, and return to lick the sap after the water has evaporated away. I wonder if they like the wintergreen flavor of Birch?
