Molly's banana bread, gluten-free

The first time I made this, we had one bite, declared it delicious, and looked forward to more. And then the Pyrex pan exploded. Damn. No more bread.

 

Last night, I made more. Gluten-free. Oh so good. It didn't explode.

 

We ate it instead.
