no-knead bread

    no-knead is so gratifying. it's amazing to have such a prettie loaf in your presence huh? i wish it had a little more depth to the flavor- it's a little on the bland side. what were your thoughts?

    you know i totally agree with you -- i did expect more. I've been struggling with the write up for it because I don't want to knock it but I kind of wanted it to be more hearty? I think a bread-baking book is in order... right?

    i've seen other recipes online adapted from the original. Some people add beer to it and others add more salt or even seeds. Cooks Illustrated did their own version of it too. I'm thinking of trying that one to see if it tastes better.

    A bread-baking book would be good. For some reason I am so terrified with kneading dough. (must get over that) I worry that I won't knead it enough of knead it too much.
