icelandic pancakes

pönnukökur with lingonberries. a popular afternoon repast for iceland...ers? yes, i know little my isn't icelandic, but neither am i.

1 cup flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp cardamom
1 cup milk
1 large egg, lightly beaten
50g of melted butter

mix the dry ingredients together, then add the wet ingredients until just mixed. let it sit for half an hour. pour roughly 1/4 cup of batter onto a very hot, greased griddle and cook until each side is golden brown. spread some lingonberry preserves thinly onto one side, then fold into quarters.

    oh i'm missing the good, thin pancakey-crepe desserts. so many creperies here, but none i've found that good. this looks yummy. i just need a nice milk tea or coffee on the side. little my is hilarious, too -- a bit of a sourpuss, that face.

    little my!!! i love the moomin series. i want to visit finland very badly, and to go to the moomin land park. these look sooo yummy. moomin mamma always made flapjacks for the family...

    Oh, very interesting recipe! I love (ordenary) Swedish pancakes and Swedish small pancakes. On my cakes I have jam. On some of the cakes I put butter (like on a sandwich), sugar(lightly) and powder them with cinnamon. The best berries for Swedish pancakes I think is European goosebarryjam(made of the ed sort of berries) and a splotch of whipped cream. Other good jams for pancakes are strawberry jam, rasberry jam and blueberry(blueberis are very healthy!) jam. To the pancakes I dronk coffee or really cold organic low-fat milk.

    I like the idea of showing the cakes by using Little My as a presenter. I like Little My. (You can find her in my photostrem. Make a search for: ”Little My”!)

    I will try this recipe. Yes, lingonberry jam is also good with pancakes.
    But...I would change the red background, besuse it has the same color as the hair and coat of Little My. She – the puppet – does not stand out well enough. Otherwise I like your presentation.
