WTF cake

The cake that just wouldn't do right deserves this title. Was tasty tho'! For those interested in such things - It was the Grit cookbook chocolate vegan death cake with cream cheese icing that I hadn't made in years. Things I forgot - let the cake layers cool quite a bit before trying to transfer them to the racks & flour the pans well (the layers of this stuck a bit & I had to play the cake reassembly game). Also, do not use organic cream cheese to make the frosting because it leaves curds that won't mix in & won't get as fluffy. Also, as much as I like more cream cheese than powdered sugar, it really needs more powdered sugar than I put in it to ice really well (a la The Grit Restaurant) and don't use organic powdered sugar unless you want off-white icing (I kinda don't mind this so much). Other than that, it was dee-lish! :)
