    Then you cook the strawberries, adding sugar and pectin. I used Pomona Pectin (available at Whole Foods) which reacts with calcium (included in the box) instead of sugar, allowing you to use less sugar than standard recipes. Sugar is a preservative, however, so jam with too little sugar might not keep as long. I used 2 cups of sugar for 6 cups of strawberries.

    In this picture, I'm filling the jars. Note the pot in the back which I used to sterilize the jars (both before and after filling them).
