THE COLLARD SHACK
AYDEN NC: Collards is one of The South's -- if not The World's -- most delicious veggies. Of course, for the best tasting collards one must toss in a ham hock when cooking to achieve that unique and special taste.
Ayden is proud to be known as The Collard Capital of the World. No doubt this tribute was contrived in a back room of Bum's Restaurant in downtown Ayden sometime during the peak of a Collard Festival some years back but, nonetheless, Ayden IS and has been the Capital of collards.
The Ayden Collard Festival is a fun happening that occurs annually the week immediately following Labor Day in September. The 2012 festival will be held September 6th – 9th.
Ayden, located in Pitt County in eastern North Carolina, is a tiny spot on the map with a population of about 5,000.
