Gluten-free pizza crust -- work in progress

Recipe for Crust:

1 tablespoon dry yeast

2/3 cup rice flour

1/2 cup + 2 tablespoons tapioca flour

2 teaspoons xanthan gum

1/2 teaspoon salt

1 teaspoon unflavored gelatin powder

1 tablespoon sesame seeds

2/3 cup warm buttermilk

1/2 teaspoon honey or a squirt

1 teaspoon olive oil

1 teaspoon cider vinegar

extra rice flour for sprinkling


Mix the dry ingredients and mix the wet ingredients separately. Put the wet ingredients in a bread machine first and then the dry ingredients. Set bread machine to dough setting and add small amounts of water if the machine knocks. Bake crust at 425 F for 10 min then add your toppings and bake for another ~20 min
