Holistic Ragu with Leftover Turkey

Mum was helping me test out recipes for my nutritional counselling compilations I'm putting together. One of the recipes is for a pasta ragu sauce made with chicken thighs (higher in iron, not to mention flavour, than breasts), but we couldn't find the thighs at the grocery. We did have leftover assorted turkey meat from Christmas though, so she threw that in with great success!
