Tomato Butternut Stew With Couscous

A little labour intensive but the heartiness and flavour of the chickpeas, butternut chunks and spices is worth it, trust me! Full of vitamins and protein too, this is definitely going to be a keeper in my book. Submitted to Presto Pasta Nights at Once Upon a Kitchen.
