Mom's Cornmeal Muffins

My mom declared that the recipe for cornmeal muffins she received over 30 years ago from a friend's boyfriend were "the best ever". I agree they're delicious - but what I liked more were the hand-written notes he included... one of them even states the method "is bulls%@t" and just to mix wet and dry together!

 

Cornmeal Muffins

Makes 28

¾ cup corn oil

2 ½ cups whole milk

¾ cup plain yoghurt or sour cream

2 large eggs

1 cup sugar

3 ½ cups cornmeal

4 cups flour

2 tbsp + 1 tsp baking powder

½ tsp baking soda

2 tsp salt

 

1.Preheat the oven to 400°F and line muffin cups with paper liners.

2.Beat together oil, milk, yoghurt, egg and sugar in a large bowl until well blended.

3.Stir in the cornmeal thoroughly, then add the flour, baking powder, baking soda and salt and stir until just combined.

4.Fill muffin tins 2/3 full with batter. Let sit for 10 minutes.

5.Bake for 15-20 minutes, until a toothpick inserted in the middle of a muffin comes out clean.

6.Turn out of the pans immediately and cool on a wire rack.

7.These freeze well and are delicious warmed in the microwave with a dab of honey butter.
