Lemon-Ricotta Pancakes

    These are the best ever! Recipe from Tastebud.

    2 c. unbleached all-purpose flour
    2 t. baking powder
    1/2 t. salt
    2 large egg yolks
    1 1/2 c. milk
    1 c. ricotta cheese (the fattier, the better)
    1 t. freshly grated lemon zest
    2 large egg whites

    In a large bowl, whisk the flour, baking powder, and salt together. Whisk in the egg yolks, milk, cheese, and lemon zest until well blended. In a separate bowl, beat the egg whites with a stand mixer until medium peaks form. With a rubber spatula, fold the egg whites into the batter, going around the perimiter of the bowl with the spatula and then making several slices across it. Repeat the process until you can't see streaks of egg whites.

    I would give you the rest of the instructions, but I'm lazy. Do the above, then cook the darn things! Don't squish them down! They get SUPER fluffy.

    Eat with maple syrup or some berry liquid. Or go crazy and eat with both.
