One of my favorites. I've made strawberry shortcake for dinner before...this one was actually reserved for dessert.

    Gabluna, I know! The strawberries are way too early, but surprisingly delicious...and 2 for $5 at the store...hence all the strawberries dishes I've been cranking out.

    This is my default strawberry shortcake recipe--I make it so much in the summer, I just have it in my head!

    Thanks, amryfm. My mom made the spider plate for me by casting a little mold of a tiny plastic spider I have. It's one of my favorite things...the plate, not the spider.

    Orphn, here's what I do:

    Rinse and remove tops of strawberries, slice to desired thickness. Sprinkle a liberal amount of sweetener over them, or if you'd like to use less sugar, a mixture of sugar and lemon will make the strawberries juice with less sugar needed. Stir well and let the berries in the fridge until they've produced a good amount of juice.

    about a cup of flour, 1 1/2 t. baking powder, 1/4 t. cream of tartar, 1/4 t. baking soda, 4 T plain applesauce, 1/2-3/4 cup soured soymilk (sour with white vinegar or lemon juice--1/2-3/4 T right into the soymilk and let sit until it's a little chunky and thick) Mix all ingredients together to get a slightly stiff, but not dry batter. Spoon into about six different mounds on a baking tray. Bake at 450 until golden on top (check at 10 mins., but could take up to 15).

    Allow the shortcake to cool a little, or if you're like me and can't wait, try to cut one open without burning yourself on the steam, spoon some berries into the middle, top with the other half of the shortcake, more berries, add some vegan whipped cream (we use hip whip) and a little dribble of berry sauce.
