Roasted Root Vegetables

I love roasting root vegetables because their colors are so spectacular. Yellow beets, purple and orange carrots and fingerling potatoes. We made a simple supper of baked chicken with dry rub and root vegetables sliced and tossed with olive oil, salt, pepper, rosemary and garlic.
