    my new husband counts these among his specialties, and is frequently asked to bring them to parties. this week i surprised him with the version i've been making for years:

    cook bacon, drain. cook some onion and garlic in the bacon grease, drain. combine bacon, onion, garlic, some shredded cheddar, and seasonings of your choice (i use the food processor for this). cut stem ends off peppers and pull seeds out. stuff with cream cheese mixture (it's a little harder than the bacon-wrapped kind... you can try piping it in but you have to have a large enough opening to get the lumps through!). roll into egg roll wrappers and fry.
