The oil appears black because its calm surface reduces the Bragg scattering of the sea surface. The ship's bows are pushing the oil aside and the turbulent wake is mixing under remaining oil, so the Bragg scattering is visible again as "normal" sea conditions are restored, leading to nicely visible ship tracks within the oil spill area.
