Day 131 - Chocolate Gingernuts
Tonights anitics left me witha a stack of the most gingery chocolate gingernuts and a small tray of marbled energy bar. Mmmm. The gingernuts are seriously hardcore. They've got a kick to them, but are really tasty with some 85% cocoa and dark chocolate chips in. Probably the best biscuits I've ever made, not that Ive made that many but they are damn good. Might post the recipe tomorrow.
Whilst I was cooking Tighe came over and we talked about stuff in the kitchen, Pam was reading in bed. She had some reflexology today and was suitably snoozed out come evening time. Unfortunately none of the stuff was ready for a scoffing by the time Tighe went and Pam was long gone. Nobody will ever know how much I baked.
50g dark chocolate chopped in to smallish chunks
Rounded tsp of ginger - I put about 1.5 tsp in
110g Plain Flour
2 tsp Baking powder
1 tsp Bicarbonate of soda
10g cocoa powder, I like the Green & Blacks it does seem darker and more chocolatey than the Cadbury Bournvile stuff.
50g Butter chopped up
40g Golden granulated sugar
50g Golden Syrup
Pre-heat the oven to 180C or 150C-160C for a mean fan oven, and line a baking sheet/tray with greasproof paper.
Sift the flour, baking powder, bicarb, cocoa and ginger in to a mixing bowl and rub in the flour till it's like breadcrumbs.
Now stir in the sugar and chocolate chunks and then finally the golden syrup.
Squish it in to a big ball and then chop it in to 16 chunks. Roll them out in to balls place on a tray and then squish them a little. We managed to fit about 10 on a tray. They will spread out in the oven.
Cook them until they've spread out and look like this. That took 11mins in our oven, but could well be longer. When they've done let them cool a bit so that they aren't soft when you pick them up, and then put them on a rack and do then next batch.
