      I try! We eat so much better when we plan ahead, otherwise we just graze and eat pasta. :) It is hard to get fired up to cook for just yourself, I know! I assume you have a working freezer now-- you could cook a batch of something and freeze a couple of servings.

      I think I definitely need to invest in a slow cooker. I just wonder if I would actually use it or if it would just sit on the counter for months at a time gathering dust?

      Well, they're not too expensive. In college I had an awesome crock pot from the 70's I got at a thrift store-- it had wood grain! I loved that thing.

      We don't use the crock pot in the summer much, but in the winter it is the BEST THING EVER to come home and have dinner ready and the house smelling yummy. The smell alone makes a crock pot worth it for me. We do crock pot dinner every Monday and I love it.

      The possibility of dust is always there, though... ;) Hope you're feeling better!
