February 3, chicken and cashews

One of the few dishes I immediately learned how to say in Chinese when we moved to Taiwan when I was 7 was for chicken and cashews, a favorite dish. I've been making a version of it based on this recipe I saw on Pinterest, adding whatever else we have on hand (this time we used red bell pepper and a korean bbq sauce). Easy, light, and delicious.
