Thai Beef and Noodle Stir-Fry

 

1 lb beef suitable for stir-fry, cut into strips

1 Tbsp soy sauce

1 tsp sugar

2 Tbsp rice wine vinegar (or dry white wine)

1 Tbsp Hoisin sauce

1 Tbsp corn starch

 

Toss all ingredients together and marinate while you prep the vegetables and noodles.

 

Sauce:

1 small can of coconut milk

1 lime

 

You can use any sort of noodles. Prepare according to package directions and set aside until later. Make whatever serving you wish. For this I used 6 cups of rotini noodles.

 

For the vegetables I used a mixture of carrots, broccoli, Shitake mushrooms, red and green peppers, some garlic, ginger. Use whatever you have on hand.

 

Using a wok heat 1 Tbsp of oil. Place beef strips in a single layer (may need to do it in batches) and sear on one side for 2 minutes then the other side. It is very important not to toss or mix the beef. You want caramelize the beef. Transfer to a dish between frying.

 

After beef is finished pour 1/4 coconut milk into wok and quickly scrape beef bits and lower the heat. This is a short minute of stirring. Raise heat again and stir fry the vegetables for 2-3 minutes. Pour remaing coconut milk in and add the juice of the lime. Lower heat, cover and simmer of 3 minutes. Finally, remove lid and toss in noodles and reserved beef and gently reheat for 1-2 minutes.
