July 4th Dinner

Ribs, steamed string beans (both green and purple), and "Trashcan Potatoes."*


Saucy Skillet Potatoes a.k.a. "Trashcan Potatoes"


1 tbsp butter .

1 c onions, sliced .

1-1 1/2 tsp salt, to taste .

1/3 c cider vinegar .

1/4 tsp pepper .

1 tbsp parsley, sliced .

4 medium potatoes, cooked, peeled, sliced, about 4 c .

1 tbsp bacon, cooked crumbled .

1/2 c mayonnaise


In a large skillet melt butter over medium heat. Add onions and saute for 2-3 minutes until tender, crisp. Stir in mayonnaise, vinegar, salt and pepper. Add potatoes and cook for an additional two minutes until hot, but not boiling. Garnish with parsley and crumbled bacon.


*When my husband and I were courting (That's such a nice word, isn't it? "Courting.") we'd go out every Wednesday night. One evening when he came to collect me, a realty brochure in the waste basket in the powder room caught his eye. It featured a recipe on the back of the brochure that I hadn't even seen called "Saucy Skillet Potatoes." So he fished out the brochure, bringing it with him as he made his exit. "We should try this," he said, "it sounds good." As with most matters culinary, he was right. In subsequent years he could never remember the name of the dish, so always referred to them as "Trashcan Potatoes." Now our friends do as well. It's a simple recipe, and very good. It goes particularly well with any type of barbecue.
