Carrot and Beetroot Soup

1 liter of vegetable stock.

400g of carrots

2 fresh beetroot (peeled).

Heaped teaspoon of cumin.

Heaped teaspoon of amchoor.

Splash of sherry.

Salt and pepper to taste.

 

Bring to the boil and then simmer for about 30mins. Allow to cool and then blitz to a puree. Do not do this near anything that might stain - like white walls :)
