Black Bean and Tomato Soup

-- In a large saucepan fry til just colouring --

Couple of peeled cloves of garlic

Chopped onion

1 tablespoon of sunflower oil

-- Add --

Drained can of chopped tomatoes (~ 400g)

Drained can of black beans (~ 400g)

Can of sweetcorn (~ 200g)

Cup of (frozen) peas (~ 200g)

2 bell peppers - chopped (~ 200g)

1 dried ancho or mulato chilli - soaked for 10 min in enough boiling water to cover it (add soak water to soup too).

Juice of a lime - zest too if you like.

Desert spoon of brown sugar

1 tsp ground cumin.

1 tsp ground coriander.

1 pint of vegetable or chicken stock

-- Bring to the boil.

-- Cook at a gentle simmer for half an hour.

-- Blitz in a blender or with a potato masher.

-- Salt and pepper to taste.

-- Add more stock if it is too thick.

Serve with fresh coriander, sour cream, and tortilla chips.
