Shrimp Sandwich with Basil Caper Mayo

A simpler and as good as a lobster roll, plus easier on the pocket :).


For the sauce:

Mix together about 1/3 cup of mayonnaise, 2 tbsp finely chopped capers, 1/4 tsp grated lemon zest, a dash of hot sauce. Sauce can be made in advance and chilled.


Now assemble, spread mayo mixture on toasted rolls or buns, top with cooked peeled deveined large shrimps which are cut horizontally in half, tomato, avocado and spring greens.


Serve immediately.
