Shrimp Cobb Salad

Dinner tonight -- an assembly of colors to welcome spring! A simple honey mustard vinaigrette ties everything together quite well.

 

For the vinaigrette:

1 1/2 tablespoons honey mustard mustard

Juice of 1 lemon

5 tablespoons good olive oil

3/4 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

 

Whisk together all of the above ingredientsin a small bowl.

 

For the salad, assemble diced avocados, cherry tomatoes, cooked shrimp, baby spinach, crumbled cheese of choice and bacon bits.
