When I saw a tweet early in the morning from Soma Chocolate of Toronto as COVID-19 self-isolation was beginning to set in and I realized I hadn’t stocked up properly on chocolate, I immediately ordered. My chocolate series finishes with a quintessential Canadian flavour: ice wine!

Soma chocolate "wanted to infuse cacao with oak. Niagara-on-the-Lake winemaker J-L Giroux sent over an oak barrel partially filled with residual yeast and grape skins from the winemaking process known as "lees." Soma roasted cacao beans [Costa Esmeraldas, Ecuador] and added the nibs to the barrel, rolling it around to make sure things were well mixed. Three months later: an aromatic wine infsued cacao emerged."
