Happy Birthday, Joanna!
White velvet cake w. strawberry jam, pastry cream, vanilla buttercream.
I used this recipe for the cake, and it came out really beautifully, though all the various measurements don't seem to line up quite right. 4 liquid ounces of whites ended up being two large eggs and one slightly smaller egg. And I used one scraped vanilla bean for the lovely little speckles.
I used this recipe for the icing and didn't like it very much. It was very, very, very sweet and was borderline broken looking in the bowl unless I stirred it vigorously. But is wasn't too hard to make without an electric mixer and I only used a very thin layer.
I'll probably take pictures of the pastry cream later because there is a lotttttt leftover.
The strawberry jam was just very basic, strawberries and sugar with a pinch of black pepper. I pureed it nice and smooth for this, but it was chunky originally.
The writing was strawberry sauce reduction and the pink buttercream was tinted with that. I have a thing about synthetic food coloring.
