Ivan Orkin's Ramen @ Momofuku Noodle Bar - Triple Garlic Mazemen
Triple Garlic Mazemen
- tonkotsu, pork fat, bacon
This bowl blew my mind! There was very little broth but overwhelming amount of complex flavors - three different preparations of garlic ( powder, poached and roasted, I think) were balanced and complimentary, yet completely different form each other. I could not taste a touch of sometimes unpleasant raw garlic bitterness, bacon was somehow sweet and spot-on seasoned, noodles were perfect.
I can write a essay about this dish, but truth be told I was thinking of only one thing - could I possibly prepare something similar to this? I do not know how unique this plate would be in Japan, but in our corners it was off the charts - easily the most original plate I have had all year.
