In cardiology we have a term to describe a particular heart sound - crescendo-decrescendo murmur. That was indeed the sound I was making when this beauty of plate was presented to me. Nothing new or revolutionary, but impeccable execution of what would normally be a humble, often peasant meal - absolutely superb!!!
