Mushroom Ceviche with Miso Aubergines and Ginger Ponzu Sauce

 

- simple, yet complex. Initially sweet and sour, flavors gradually turn into umami richness. Red miso matches mushrooms really well, and adds subtle sweetness, it seems like.
