Late Dinner - Veal

Veal Striploin, Black Garlic Mashed Potatoes, Baby Chard, Rich Veal Sauce


Simple dinner, with a twist: I sous-vide incredible grass-fed veal, made mashed potatoes with black (fermented) garlic, and quickly sauteed Baby Swiss Chard with Ginger.


Everything on the plate worked ( can't say that about the damn a/c in my place! LOL), so I was quite pleased. Veal Stock is house made, according to "French Laundry" recipe, BTW - look at that color and thickness!
