Late Dinner - Veal

    Veal Striploin, Black Garlic Mashed Potatoes, Baby Chard, Rich Veal Sauce

    Simple dinner, with a twist: I sous-vide incredible grass-fed veal, made mashed potatoes with black (fermented) garlic, and quickly sauteed Baby Swiss Chard with Ginger.

    Everything on the plate worked ( can't say that about the damn a/c in my place! LOL), so I was quite pleased. Veal Stock is house made, according to "French Laundry" recipe, BTW - look at that color and thickness!

      this looks to die for. you are such a talent over there - and how do you have your own sous vide equipment?? i love fermented garlic - those potatoes must have been sweet, in addition to creamy... the veal looks out of control (what makes it veal if it's grass fed, too?) and the veal stock is like velvet clothing.

      only thing is, your lighting is sort of flat, so it doesn't show the magic of the food as it should. as the title suggests, i'm guessing you shot this with lamp light or strobes, it being dark out? make the leap and make these earlier in the day, so you can properly capture such works of art!

      YES!! Oh, how i wish i would have looked at this before I put up my dinner...

      Do you have a cryovac and thermal immersion circulator in your kitchen or do you have some other rig? Or do you work in a kitchen and cheat by cooking at work then bring it home to finnish? (I kid, I would do it too if they would let me!)
