Gâteau au chocolat d'Amandine
Here is the recipe (in French): Gâteau au chocolat d'Amandine. A piece of advice: check the cake after 10 minutes in the oven because mine was cooked in 15 minutes!!
125 g butter
100 g caster sugar
50 g Wheat flour
200 g good quality dark chocolate (66% cacao)
Preheat oven to 180°C
Separate the yolks from the whites.
Whisk the egg yolks and sugar together in a bowl until pale.
Cook the chocolate on the microwave or on the double boiler (double boiler is better, really) until it melts.
Add the butter to the melted chocolate out of the microwave or double boiler and stir it with a wooden spoon till it is perfectly mixed.
Add the flour to the pale yolks and stir.
Put the chocolate into the bowl and stir.
Whisk the egg whites until stiff and gently fold into the mixture. You can add some cointreau at this step or other liquors if you want to change the taste.
Grease the tin with the extra butter and bake for 10 to 20 minutes depends on the oven and your taste. This cake is best if slightly undercooked according to my taste.
Remove from the oven and leave to cool.
Carefully remove from the tin.
