Salmon with Mustard Sauce

Recipe from Phillips Flagship Restaurant, Washington DC. This is my all time favorite recipe for salmon. I skip the poaching, and instead put the fish into a buttered or oiled cast iron dish, directly into a 350 degree oven and bake for about 20 minutes.
