Steam cooking witlof (Belgian endive). // Deutscher Chicorée.

Simmering is also possible but I prefer *plain* steaming developing and preserving the full taste of witlof, especially that artistic bitter element which makes witlof a dish fit for the gods as would say Shakespeare.
