Fondant aux Pommes
Soft Apple Cakes. From Dorie Greenspan's Paris Sweets. I adapted Maison Kayer's recipe which makes 20 little cakes, and turned it into 2 5" petite cakes. It was heavenly. Soft. Fluffy and just right. The rum soaked and flambed raisins gave the otherwise ordinary looking apple cake a boost. A definite keeper.
