Tea leaf salad using the tender, fermented shoots of the tea plant, rather than a slurry. Mixed before service and presented as shown, very crunchy and dotted with fresh whole green chilis. I asked for some lemon or lime to brighten up the flavor. Full of garlic and fish sauce notes, just the way I like it.
