Harvesting

Most farms and cooperatives harvest their coffees by hand. The coffee cherries do not all ripen at once, so picking is typically done in stages, and requires from three to seven rounds before the harvest is complete. The middle of the harvest is traditionally considered to produce the finest coffees—not too green and not too ripe.
