Fernando and the olives from one tree
The net just catches the olives that escape from the picker's hands. one does not "shake" the tree! The olives are picked by hand, taking care not to bruise them. The nets are afterwards emptied into plastic boxes, and taken to the "frantoio" (oil mill) as soon as possible, so they do not suffer from the humidity. The leaves are removed later, before the fruit is crushed.
