Chia-Blueberry Porridge

I didn't really have any uses for my chia seeds besides throwing some in my green smoothies, so as soon as I saw this recipe today on the Common Sense Homesteading blog I made it...even though it was for lunch :D It turned out great even though I only had powered milk and frozen blueberries on hand.

 

1/2 cup milk

2-3 tablespoons chia seeds

1 egg

pinch salt

1/2 blueberries

drizzle of maple syrup or sprinkle of sweetener

 

Mix milk, chia, egg, and salt and allow to sit 5-10 minutes. Warm over low heat until thickened. Add blueberries and warm through. Serve sprinkled with your favorite sweetener.
