Breakfast for the birthday girl
She wished for the homemade waffles so here is how I made them:
2 1/2 cups of freshly home-stone-ground organic millet, barley, oat, rye and red spring wheat
soaked overnight in 2 cups of raw Jersey cow milk kefir.
2 egg yolks from our backyard free range hens, lightly beaten;
1 tablespoon of organic grade B maple syrup;
2 tablespoons of organic virgin coconut oil;
1 teaspoon of unrefined sea salt;
Mixed all together until incorporated and then added:
4 egg whites from our backyard free range hens that were separately beaten until stiff.
Folded this together carefully by hand.
I cooked waffles in a hot, well oiled (organic coconut oil) cast iron waffle iron.
I served them with RAW butter from our pastured jersey cows, homemade organic apple sauce and a touch of organic grade B maple syrup.
