Delicious!!! Homemade (by mom) using only natural ingreedients for my sister's birthday a couple of weeks ago.

3 x CAKE DOUGH:

For each of three layers use:

4 organic free range eggs

4 tablespoons of rapadura

4 tablespoons of organic unbleached wheat flour

5 tablespoons of organic shredded walnuts

1 tablespoon of pure vanilla extract

 

Beat eggs and rapadura. Stop the mixer and continue using the wood spoon. Mix in vanilla extract add flour (one by one tbs) folding the dough and than walnuts (one by one tbs).

Bake about 25 minutes at 180C (check with toothpick if it is done).

Take out of the oven and let it cool down.

 

If your oven is large enough you may bake these three in three pots or pans at the same time.

 

Sprinkle each layer with the juice squeezed from the organic orange or some good rum.

 

FROSTING:

6 organic free range eggs

6 tablespoons of rapadura

100g organic 87% or 75% cocoa dark chocolate

7 tablespoons of grated walnuts

250g of organic grass fed butter at room temperature (or virgin coconut oil).

(if using unsalted butter add a pinch of unrefined sea salt)

 

Beat eggs and rapadura (you may want to steam the mixture over the rolling hot water for 15 minutes so that you get eggs cooked and than cool the mixture down).

Add melted chocolate and incorporate using wood spatula.

 

Beat butter (or virgin coconut oil) and slowly add to this the previous mixture, than add walnuts (tbs at the time).

 

Layer the cake finishing with the frosting on the top.

Use aprox. two thirds of the frosting to sandwich the three layers together and coat the cake with the remainder of the frosting. Sprinkle with some shredded walnuts.

Cool the cake in the fridge to harden the frosting.
